Lemon Chicken


Orange chicken? Never heard of her. Chinese lemon chicken? That's my standard. This is the recipe for all of us who are trying to be healthy but can't deny our love for fried food. Here, I  skip the deep-frying, and instead  pan fry for a "cleaner" dinner. 

Ingredients for 4:                               sauce:

- 3 chicken breasts                                - 3 tbsp. sugar

- 1 clove of garlic                                   - 2 tbsp. cornstarch

- 5 ginger slices                                     - 2 cups of chicken broth  

- 1 tbsp. shaoxing wine                       - 4 tbsp. lemon juice

- 1 tbsp. soy                                             - 2 tsp. salt

- 1 tsp. sesame oil                                   - 1 lemon sliced

- 1/2 tsp. salt                                                        

- 1 egg

- 1/2 cup cornstarch

- enough oil to coat the bottom of your pan


 

Directions

- Slice your chicken breasts into small bite size cubes. Marinate your chicken cubes in garlic, ginger, soy sauce, cooking wine, and sesame oil. Mix, set aside and let sit for at least 30 mins.

- In a large bowl, beat together one egg, and 1/2 cup of cornstarch to form a batter. Add your chicken cubes to the batter and stir to coat.

- Coat the bottom of a large pan with oil and place it over medium to high heat on the stove. Allow the oil  to warm up for one to two minutes. You can check if it's hot enough by sticking the end of a wooden spoon or chopstick into the oil- once the oil starts to bubble around it- it's ready!!

- Add your chicken cubes to the pan. Let your chicken cook untouched for 2-5 min. Then, using a pair of tongs, flip it to brown on the other side.

- Once finished, drain your chicken of any excess oil with a slotted spoon or paper towel. Leave about a tbsp. of oil in your pan. Safely discard any leftover oil.

- Separate your pieces of chicken with a pair of tongs or knife. Set aside in a dish or large plate.

- In another bowl, combine your sauce ingredients, and add your lemon slices. Heat your leftover oil in heated pot or pan (or add about a tbsp of oil). Slowly add your sauce mixture to avoid any splatter.  Stir constantly to cook your sauce until it is clear. In the picture above, you can see how cloudy the sauce will look when it's first added to the pot.

- Once your sauce is done, pour it over the chicken and serve! :-) 

Serve with your veggie of choice

...and with rice (of course)
